Ingredients
100ml warm water
150ml milk (room temperature)
2 tsp (7g) yeast
1 tsp sugar
350g plain flour
½ tsp salt
1-2 sprigs of thyme (optional)
Method
Combine the water and milk. Add the sugar and yeast and dissolve. Set aside for 5-10 minutes.
In another bowl, combine the dry ingredients and thyme.
Gradually add the yeast mixture to the flour mixture until well combined.
Remove from the bowl and knead the dough for 5-10 minutes.
Return the dough to the bowl and cover with a towel. Leave to rest for about 1 hour until the dough has doubled in size.
Flatten the dough and divide into 6 equally-sized balls.
Flour your surface and rolling pin and roll out each ball of dough to a rough circle, about 15-20cm in diameter.
Heat a pan over medium heat and cook the pita for about 1 minute on each side.
