Bean Tacos

Play
Method:
  1. Heat oil in a pan over medium heat. Add the garlic and onion and saute for 3 minutes.
  2. Add the drained beans and seasonings. Stir for 5-8 minutes until warmed, crushing some of the beans with the back of a spoon.
  3. Remove from heat and set aside.

To make the guacamole:

  1. Crush the garlic and mix with the coriander and chilli in a bowl. If you have a pestle and mortar, combine the ingredients into a paste.
  2. Add the avocados and roughly crush with a fork or pestle and mortar so that it is still a little chunky.
  3. Add the lime juice and stir through. Set aside.

To make the salsa:

  1. Mix all of the salsa ingredients together in a bowl. Set aside.

To construct your tacos:

Heat the taco shells according to packet instructions, stuff with your chosen fillings and enjoy!
