Souvlaki Chicken Skewers

Souvlaki is a popular Greek fast food consisting of small pieces of meat grilled on a skewer.

You can choose to eat the chicken straight off the skewers, served with salad, or perhaps cous cous – or slide the meat off the stick and wrap it up with chips, salad and greek tzatsiki sauce inside a warm pitta bread! Check out our video at the bottom of this post.

Ingredients
  • 650g chicken breast 
  • 5 garlic cloves 
  • Juice and zest of 1 lemon 
  • 2 tbsp dried oregano 
  • 1 tsp dried rosemary 
  • 1 tsp paprika 
  • 1 tsp ground cumin 
  • 1 tsp salt 
  • 1 tsp black pepper 
  • 3 tbsp olive oil 
Method
  1. Dice the chicken breasts and add to a bowl or container. 
  2. Add all of the other ingredients and mix well so that all of the chicken is covered in the marinade. 
  3. Cover and chill for at least 4 hours, or overnight if possible. 
  4. Thread the chicken pieces onto 6 skewers. If using bamboo skewers, make sure to soak these for at least 30 minutes prior. 
  5. Grill or barbeque for about 10 minutes or until cooked through, turning midway.
