Oaty Easter Cookies

These Easter cookies make a great alternative to chocolate Easter eggs, and are great fun to make with the whole family! 

Made with just two ingredients, plus whatever you choose to decorate them with.

Ingredients
  • 1 cup oats 
  • 3 heaped tbsp apple sauce OR 2 ripe bananas OR ½ cup nut butter of choice – Either of these ingredients work as a binding agent to stick the oats together – take your preference on flavour!

Toppings: 

  • Greek yoghurt 
  • Fruits of choice 
Method
  1. Preheat oven to 200°C. 
  2. In a mixing bowl, combine oats with EITHER apple sauce OR bananas OR nut butter.  If using bananas, mash these as you are combining. 
  3. For the apple sauce recipe – split mixture into 4.  For the banana and nut butter recipes – split into 6. 
  4. Roughly form mixture into egg shapes on a piece of baking paper. 
  5. Bake for 15 minutes. 
  6. Remove from oven and allow to cool. 
  7. Decorate eggs with yoghurt and fruits – you could even try to turn one into a bunny shape!
