Healthier Toad in the Hole

Make a few healthy tweaks to this family favourite, Toad in the Hole – ultimate autumnal comfort food! Serve with your favourite greens and downed in onion gravy.

Ingredients
  • Frylight spray 
  • 100g red onion 
  • 8 reduced fat sausages/chicken sausages/vegetarian sausages 
  • 2 eggs 
  • 250ml skimmed milk 
  • 100g plain flour 
  • ½ tsp dried thyme

Method:
  1. Preheat the oven to 200 C. 
  2. Coat the bottom of a tray with frylight spray. 
  3. Thickly slice the onion and place in the tray, making sure to separate the layers. 
  4. Place sausages on top of the onion. 
  5. Cook in the oven for 10-15 minutes. 
  6. Meanwhile, prepare the batter. In a bowl, whisk together the eggs and milk. In a separate bowl, weigh out the flour and gradually add the wet ingredients. Whisk until smooth. 
  7. Once the batter is smooth, mix in the dried thyme. 
  8. Remove the tray from the oven and add the batter immediately. Place back in the oven and bake for 30 minutes.
