RECIPE: Frozen Yoghurt Cups

Keep your cool in this heatwave with these healthy frozen yoghurt cups. Just four ingredients and a few minutes is all it takes to prepare these (n)ice treats! Tweak the recipe to your favourite flavours using different combos of fruits and nuts! Brrrrilliant.

Ingredients
  • Low-Fat Plain Yoghurt  – source of calcium for strong bones and teeth  
  • Berries (fresh or frozen) – full of vitamins, minerals and antioxidants  
  • Nut Butter (e.g. almond butter, peanut butter or cashew butter) – for a protein hit
    Nuts, roughly chopped (e.g. walnuts) – full of healthy fats, protein and fibre
Method
  1. Line a cupcake tray with cupcake cases and fill the bottom of each case with a tablespoon of yoghurt.
  2. Layer on top of this the berries, nut butter and nuts.
  3. Top with another dollop of yoghurt.
  4. Put the tray into the freezer for a minimum of 3 hours until frozen and ice-lolly like! For the best texture, leave the cupcake to thaw at room temperature before eating.
