RECIPE: Blueberry Pancakes

Power up your pancakes with this healthy blueberry pancake recipe. Bursting with antioxidants and naturally sweet, they’re flippin’ nutritious and delicious.

Ingredients:
  • 100g rolled oats 
  • 2 eggs 
  • 60g fat free Greek yoghurt 
  • 2 tsp vanilla extract 
  • 1 tbsp honey 
  • 1/2 tsp bicarbonate of soda 
  • 200g blueberries (you can swap for raspberries if you prefer) 
  • lemon zest (optional)

Method:
  1. Add the oats to a food processor and blitz until a rough flour forms. 
  2. Whisk the egg, yoghurt, vanilla extract and honey in a bowl. 
  3. Mix in the oat flour, bicarbonate of soda, blueberries and lemon zest if using. 
  4. Heat a few sprays of frylight in a pan and spoon in a small amount of pancake batter.
