RECIPE: Banana Biscuits

Sick of banana bread after the lockdown banana bread baking craze? But still craving something sweet yet healthy? Go bananas all over again for these banana biscuits instead!

Ingredients:
  • 1.5 cup rolled oats 
  • 1 ripe banana 
  • 1 egg 
  • 1 handful sultanas 
  • 1 tsp honey 
  • 1/2 tsp cinnamon 
  • 1/4 tsp baking powder 
  • Sprinkle of salt 
  • (1 tbsp milk if needed depending on consistency) 
Method:
  1. Set oven to 175 degrees and line a baking tray  
  2. Mash ripe banana with a fork  
  3. Add in oats and sultanas  
  4. Mix in the egg, honey, cinnamon, baking powder and sprinkle of salt  
  5. It should be thick enough to pack into cookie shaped mounds. If the consistency is too thick add in some more milk, if too runny add a few more oats.  
  6. Form into 9 small cookie shapes  
  7. Bake for 15 minutes
