Healthy Hack your Christmas • Wholemeal Bread Sauce

For some families, it makes Christmas Christmas, for others… it’s disgusting. Is bread sauce part of all the trimmings in your Christmas lunch?

Often made with white bread and cream, you could be pouring lots of sneaky hidden calories on top of your festive feast – why not try our healthy wholemeal version? Just as tasty, just as traditional!

Ingredients

  • 100g wholemeal bread
  • 500ml skimmed milk 
  • 1 onion, peeled 
  • 10-15 whole cloves 
  • 2 bay leaves 
  • 1 tsp light spread 
  • ¼ tsp nutmeg 
  • Freshly ground black pepper

Method

  1. Place the bread in a food processor and process until breadcrumbs form. 
  2. Cut off the ends of the onion and peel. Stud the onion with cloves and place in a saucepan with the milk and bay leaves. 
  3. Heat the saucepan until it reaches a simmer. Lower the heat and simmer for 5 minutes. 
  4. Remove the onion and bay leaves. 
  5. Stir in the breadcrumbs and simmer for 5-10 minutes until thickened. 
  6. Stir in the butter and nutmeg. Add freshly ground black pepper to taste. Serve immediately.
