Healthy Hack your Christmas • Stuffing (two ways!)

All the trimmings, without all the fat and calories?? Yes please!

Make your own stuffing this year (it’s quick and easy!) to whip up a healthier addition to your Christmas dinner.

Will you make Chestnut and Cranberry or Sage and Onion? …. or both?! Go on then, it is Christmas!

Chestnut and Cranberry

Ingredients:

  • 100g wholemeal bread 
  • ½ tbsp olive oil 
  • ½ large onion, finely diced 
  • 50ml water 
  • 1 egg yolk 
  • 80g cooked chestnuts, chopped 
  • 50g dried cranberries 
  • ½ tsp dried thyme 

Method:

  1. Preheat the oven to 180 C. 
  2. Add bread to a food processor and process until rough breadcrumbs form.  
  3. Heat oil in a pan over medium heat. Add the onion and saute for 3 minutes until softened. 
  4. Remove pan from the heat and mix in the bread and water. 
  5. Add the remaining ingredients. Combine well. Add a little extra water if needed. 
  6. Transfer to a baking dish and bake for 35-40 minutes.

  • 1 tsp dried sage
