Healthy Hack your Christmas • Figgy Pudding

Try our delicious spiced orange Christmas pud recipe for a lighter take on the traditional dessert.

Ingredients

  • 25g dried cranberries 
  • 70g dried mixed fruit 
  • 1 banana 
  • 1 apple, grated 
  • 1 egg 
  • 50g wholemeal bread 
  • 50g self-raising flour 
  • 30g flaked almonds 
  • Zest of 1 lemon 
  • Zest of 1 orange 
  • 1 tsp cinnamon 
  • 1 tsp mixed spice 
  • ½ tsp ground ginger 
  • ¼ tsp nutmeg 
  • 15 sprays Frylight

Method:

 

  1. Preheat the oven to 200 C. 
  2. Soak the dried cranberries and mixed fruit in 50ml boiling water for 10-15 minutes. 
  3. In a bowl, mash the banana and mix in the apple and egg. 
  4. Place the bread in a food processor and process until breadcrumbs form. 
  5. Add the breadcrumbs, remaining dry ingredients, and the dried fruit, along with the water they were soaking into the bowl and combine all ingredients together. 
  6. Prepare a pudding basin, circular cake tin, or oven proof bowl by greasing with Frylight. 
  7. Pour the mixture into the dish and pack down. Cover with pleated baking paper and foil, ensuring it is tightly secured. 
  8. Place the pudding dish on a deep oven tray. Fill the tray with water to create a bain marie. 
  9. Bake for 90 minutes. Remove from the oven and allow to cool in the covered dish.
