Fruity Moroccan Cous Cous Salad

Our celebrations of Black History Month continue as we take our next pit stop in Morocco, with this fruity cous cous, filled with a flavorsome five-a-day!

It’s so easy to make cous cous, no cooking required! All you need is a kettle, and a knife and chopping board to chop up your fruits ‘n’ veggies. Oh, and a lemon zester, but you can use a cheese grater if you don’t have one.

Ingredients

·  150 g instant couscous

· 2 tbsp olive oil

· 1 Pomegranate

· 1 ½ courgette

· 1 red bell pepper

· 2 oranges

· 1 fresh fig

· 1 tbsp raisins

· Fresh parsley

· Salt & pepper

· Paprika powder

· Ginger powder

· Cumin

Method

In a large bowl, put couscous and pour boiling water to cover the couscous

2. Cover the couscous with a towel and let it rest for 5 minutes

3. Add your seasoning and olive oil and mix with olive oil

4. Wash oranges and grate the orange zest, next peel the oranges and chop them into small chunks, add the zest and chopped oranges

5. Deseed the pomegranate and add it to the bowl

6. Dice courgette, pepper and fig and mix with other ingredients

7. Wash and chop the parsley

8. Mix everything together, add any seasoning/olive oil if needed and your fresh Moroccan couscous salad is ready

9. Enjoy!
